Chocolate Cake in a Mug: My Pregnancy Obsession

During my first trimester, I could not eat ANYTHING sweet. It really wasn’t until around week 17, that I started getting a hankering for sweets. All of a sudden I started day-dreaming of this Flourless Chocolate Cake (my ALL-TIME favorite!!!) and from there on chocolate cake has been my go-to! The only issue with the flourless chocolate cake is that take a little bit of time to make which isn’t ideal when the 11pm craving hits. One night I was craving chocolate cake but I didn’t have it in me to bake an entire cake so I searched countless “cake in a mug” recipes. I had never made one before but the name hinted that they would be easy and fast to make. I played around and altered a few recipes (I had to work with whatever I alredy had in my kitchen at 11pm lol) and alas, a gooey chocolate cake fit for pregnant mamas late, late at night! I have made this recipe more times than I would like to admit…..and I always, ALWAYS pair it with Vanilla Bean Haagen Dazs ice cream. This recipe makes a good amount of cake, so I usually split it up between 3 treats (especially since I eat it with ice cream).
Chocolate Cake in a Mug Recipe
Equipment
1 10 - 12 oz. microwave safe mug
1 tablespoon measuring spoons (Here are mine. I always get asked where they’re from)
Ingredients
2 tablespoons salted or unsalted butter
4 tablespoons milk
2 tablespoons sugar (I often use about 1.5TBS just to cut back a tad on sugar)
¼ teaspoon vanilla extract
⅛ teaspoon salt
¼ teaspoon baking powder
4 tablespoons hot chocolate mix (this is my all-time favorite hot cocoa)
4 tablespoons all purpose flour
1 tablespoon chocolate chips, optional
Instructions
1. Grab your favorite 10-12 oz mug. Place the butter in the mug and pour in the milk as well. Microwave the butter and milk until the butter melted, about 30 seconds in the microwave. Stir to combine. If needed, heat again for 10 - 15 seconds until the butter has melted.
2. Stir or whisk in the sugar followed by vanilla extract, salt and baking powder until smooth and well combined. Stir in the hot chocolate mix, followed by the flour until smooth and well combined. If you would like, go ahead and stir in 1 tablespoon chocolate chips as well.
3. Microwave the hot chocolate mix mug cake in the microwave for 60 - 90 seconds (1 - 1 ½ minutes). The mixture should puff up and resemble cake. If the cake seems liquidy or underbaked, heat the mug cake in the microwave in increments of 15 seconds until the cake is to your desired consistency. My microwave isn’t the most powerful, so I usually end up microwaving mine for about 3 minutes.
4. Allow the mug cake to cool for 2 - 3 minutes. Pair with a few scoops of ice cream or top with whipped cream….or both. Enjoy!!
